He transferred to Singapore from the exclusive St. Regis Resort Bora Bora in French Polynesia, where as Executive Chef, he opened three remarkable dining destinations including Jean-Georges’ signature restaurant.
He previously headed the kitchen at The Raleigh in Miami, Florida, which features a restaurant by great chef Eric Ripert. After studying at the prestigious Ecole Hôtelière Jean Ferrandi in Paris, and reaching the finals of France’s apprentice of the year award, his first cooking assignment was during military service from 1994-1995, when he was personal chef to the Military Governor of Paris. His apprenticeship was under 2 Michelin-Star
Chef Bernard Joinville at Restaurant ‘Lasserre’ in Paris. In 1992, he first joined Starwood as Commis de Cuisine under Chef Jean-Marie Meulien at the 2 Michelin-Star ‘Clos Longchamp’ restaurant at Hotel Meridien Etoile in Paris. He was subsequently invited to joined Chef Meulien at the Restaurant ‘La Marina’ in Valbonne as Chef de Partie, before first venturing abroad to pursue his career in 1997, joining the exclusive ‘K Club’ resort in the French West Indies as Sous Chef.

A year later he earned another promotion, to Chef de Partie, switching to Hotel Eden Roc under celebrated Chef Jean-Claude Duffour at St Barthelemy in the French West Indies. In 1999 he returned to Paris, as Chef de Partie at the acclaimed gastronomic restaurant ‘Jules Verne’ at the Eiffel Tower, under Michelin-starred Chef
Alain Reix.

His lifelong learning in the excellence and rigour of the culinary art was further extended in 2000, joining one of the top 3 Michelin-Star restaurants in Paris, Restaurant ‘Ledoyen’, as Chef de Partie under famous Chef Christian Lesquer. He gained his first experience as Executive Chef at a boutique hotel, moving to Sunset Beach hotel in Shelter Island, New York in 2003.
